    An unpeated Chichibu single malt from Saitama, 6 Years Old, matured in ex-bourbon American oak, distilled in 2010. Fruit led, all vanilla, coconut and honey. The fast mountain maturation gives it depth beyond its years. Bottled at 61.5%, a run of 209 and bottled by La Maison du Whisky. A sought after Saitama release.

    Ichiro Akuto built Chichibu in 2008 in a landlocked basin in Saitama, carrying forward a distilling line that ran back through the lost Hanyu distillery. Wide day to night temperature swings drive the wood interaction, which is why Chichibu reads older than its years suggest. Chichibu loses roughly three to five per cent of each cask a year to evaporation, near double the Scottish rate, so a young whisky here carries the depth of a much older one.

    This is unpeated single malt, matured in ex-bourbon American oak. At 6 years, helped by an angel's share near double Scotland's, the make tastes older than it is, the esters rounding into stone fruit and the oak settling. Ex-bourbon vanillin reads as vanilla and oak lactones as coconut. The spirit character stays fruit forward, apple and pear over a soft, malty body and a gentle spice.

    This bottling was distilled in 2010, from cask 663 and bottled in 2016. It is a run of 209 bottles, released for France, bottled by La Maison du Whisky. Releases at this scale sell out quickly, which is part of why Chichibu has become one of the most traded distilleries in the world. Bottled at 61.5%, natural colour and not chill filtered.
