Description
The Chichibu distillery was founded in 2008 by Ichiro Akuto, whose family had distilled at the closed Hanyu plant, and works on a small scale in the Saitama mountains. The distillery ferments in washbacks built from Japanese mizunara oak, where native lactobacilli add fruit and a light incense note to the wash. Wide day to night temperature swings drive the wood interaction, which is why Chichibu reads older than its years suggest.
This is unpeated single malt, matured in ex-bourbon American oak. At 10 years the accelerated maturation has driven deep oak interaction, ellagitannins framing the fruit with a dry, spiced grip. Ex-bourbon vanillin reads as vanilla and oak lactones as coconut. Chichibu's fruit led house character carries throughout, pear and honey balanced by a dry, oaky finish.
This bottling was distilled in 2008, from cask 177 and bottled in 2019. It is a run of 174 bottles, an event release. Releases at this scale sell out quickly, which is part of why Chichibu has become one of the most traded distilleries in the world. Bottled at 60.4%, natural colour and not chill filtered.
