Description
Founded in 2008 by Ichiro Akuto, Chichibu has risen fast from a small mountain distillery to one of the most sought names in Japanese whisky. Wide day to night temperature swings drive the wood interaction, which is why Chichibu reads older than its years suggest. The make is double distilled in copper pot stills built by Forsyths, from mostly unpeated barley, and matured on site in dunnage warehouses.
This is unpeated single malt, matured in ex-bourbon American oak. At 10 years, old for a Chichibu, the long wood contact has built structure, ellagitannins giving a dry oak grip beneath the fruit. Ex-bourbon vanillin reads as vanilla and oak lactones as coconut. The spirit character stays fruit forward, apple and pear over a soft, malty body and a gentle spice.
This release was drawn from the distillery's own stock and bottled in 2025. It is a run of 4956 bottles. Releases at this scale sell out quickly, which is part of why Chichibu has become one of the most traded distilleries in the world. Bottled at 50.5%, natural colour and not chill filtered. It remains one of the most collected names in modern Japanese whisky.
