Daftmill Single Cask 12 Years Old 2009

An official release of Daftmill, a 12 year old, from 2009, cask 046/2009, at 60.4%, 700 bottles in all. Daftmill is the patient farm malt of the Cuthbert brothers, distilled around the farming year. Releases come as Summer and Winter batches, single casks and the odd cask strength bottling.

The spirit was distilled in a single pair of onion shaped stills on farm well water, for a light, floral make of real finesse. Maturation in an Oloroso cask laid dried fruit over the light, fruity malt. Integration folds eugenol (clove) and vanillin (vanilla) into the malt, the delicate body fuller and softer. Refill oak lets the delicate Daftmill character lead, lemon and green apple beneath. Years in oak round the spirit, the grass and citrus deepening to honey and orchard fruit. The light, elegant make is a model of the classic Lowland style. Maturation in the gentle Fife climate keeps the spirit fresh and floral.

At 60.4%, undiluted, it is deep and fruity. A clean, grassy citrus, with dried fruit, fig and walnut from the cask. Lemon, pear and a soft honey fill the middle. Apple, honey and a soft oak see out the finish. This is a light, floral Lowland single malt.
