    An official release of Daftmill, a 12 year old, from 2007, cask 23-25,27,32,35,38, at 46%, 1785 bottles in all. Daftmill is a cult Fife farm distillery, its small releases keenly sought after. It was founded in 2005 by brothers Francis and Ian Cuthbert, on their working farm at Cupar in Fife.

    Worked through the small stills for a delicate, fruity make, for the light, elegant make Daftmill is known for. Ex-Bourbon casks held it, the gentle oak letting the delicate, fruity character lead. In integration lactones (coconut) and vanillin (vanilla) knit with the spirit, lemon deepening to honey. The clean spirit shows the cask clearly, vanilla and honey over a grassy citrus. Water comes from a private well on the farm, the spirit run through a single pair of onion shaped stills. A gentle maturation suits the light make, the fruit growing richer with time. The patient, restrained approach has made Daftmill one of the most sought after of the new distilleries.

    Bottled at 46%, it is rounded. Lemon, pear and a soft malt, with a soft vanilla from the oak. Beneath it run lemon, green apple and a soft honey. The finish runs delicate, grassy and fresh. This is a refined Lowland single malt from a Fife farm.
