Description

This PX Sherry Cask Matured 2023 Edition is a 5 year old matured in Pedro Ximenez casks. A wide release of 23,000 bottles. Kilchoman is the only farm distillery on Islay, founded by Anthony Wills in 2005.

The distillery malts on site and bottles on the farm, keeping the whole process in one place. Matured in Pedro Ximenez casks, the wood pulls the young peated spirit towards sweet dark fruit.

Bottled at 50%. From the Pedro Ximenez come raisin and date, while peat phenols bring the smoke. The recorded notes run to smoke, dried fruit, fresh oak, a sherried character, chocolate and leather. A PX-matured farm malt.
