Description

This PX Sherry Cask Matured 2021 Edition is a vatting of 2013 and 2015 spirit matured in Pedro Ximenez casks. An outturn of 12,000 bottles. Kilchoman, founded by Anthony Wills in 2005, is the only farm distillery on Islay.

Kilchoman malts its barley on site and bottles on the farm, a barley to bottle approach rare in Scotch. Matured in Pedro Ximenez casks, the sweetest of the sherry styles, the wood pulls the peated spirit towards dark fruit.

Bottled at its natural cask strength of 47.3%. Raisin and date come from the Pedro Ximenez melanoidins, with peat phenols carrying the smoke. The recorded notes run to chocolate, smoke, leather, a sherried character, cooked fruit and dried fruit. A PX-matured farm malt.
