This 9 year old from 2014 is one of Kilchoman's Sister Casks, A Maturation Journey, an ex-Bourbon single cask number 650 giving 200 bottles for Germany. Kilchoman, the island's only farm distillery, was founded by Anthony Wills in 2005.
At Rockside Farm the whole process runs from barley to bottle on one site. Matured in a single ex-Bourbon cask over nine years, the wood frames the young peated spirit.
Bottled at its natural cask strength of 55.3%. The ex-Bourbon gives vanilla while peat phenols carry the smoke. The recorded notes run to chocolate, a coal-gas edge, honey, a nutty note and vanilla. One of a pair of sibling bourbon casks.
