Kilchoman The Kilchoman Club – 9th Edition 8 Years Old 2012

This 8 Years Old was the 9th Edition for The Kilchoman Club, vatted from four Oloroso casks from 2012. An outturn of 1,311 bottles. Anthony Wills founded Kilchoman in 2005; it is the only farm distillery on Islay.

Kilchoman handles malting through bottling on its own Islay farm. Matured in Oloroso casks, the sherry wood wraps the peated spirit in dark fruit.

Bottled at its natural cask strength of 56.2%. The Oloroso lends fig and raisin through its melanoidins, the peat phenols a smoky layer. The recorded notes run to a cooked vegetable note, chocolate, a coal-gas edge, cooked fruit, dried fruit and fresh fruit. A club sherried vatting.
