Description
This Single Cask was bottled for Bresser & Timmer, the Dutch retailer, a 5 year old from 2011 matured in Oloroso, cask 559. An outturn of 348 bottles for the Netherlands. Kilchoman, founded by Anthony Wills in 2005, was the first new distillery on Islay in over 124 years.
Kilchoman malts its barley on site and bottles on the farm, a barley to bottle approach rare in Scotch. Matured in a single Oloroso cask, the sherry wood pulls the young peated spirit towards dark fruit.
Bottled at its natural cask strength of 58.2%. The Oloroso lends fig and raisin through its melanoidins, the peat phenols a smoky layer. The recorded notes run to a kippered maritime note, a sherried character and smoke. A young sherried single cask for a Dutch retailer.
