Kilchoman Small Batch Release 5 Years Old 2011

This Small Batch Release is a 5 year old from 2011, vatted from Pedro Ximenez and Oloroso casks. An outturn of 894 bottles for Germany. Kilchoman, the island's only farm distillery, was founded by Anthony Wills in 2005.

The distillery malts its own barley and bottles on the farm. Matured in Pedro Ximenez and Oloroso casks, the two sherry styles pull the young peated spirit towards sweet dark fruit.

Bottled at its natural cask strength of 58.2%. The Pedro Ximenez gives raisin and date, the Oloroso fig, both from their melanoidins, while peat phenols carry the smoke. The recorded notes run to chocolate, dried fruit, fresh fruit, dried hay, a nutty note and a sherried character. A sweet sherried small batch.
