Description

This Sauternes Cask Matured is a 5 year old from 2011, fully matured in Sauternes wine casks. A wider release of 6,000 bottles. Set up by Anthony Wills in 2005, Kilchoman remains Islay's only farm distillery.

The distillery follows its barley from field to bottle on the one Islay farm. Matured in Sauternes casks, the sweet wine wood adds honeyed fruit to the young peated spirit.

Bottled at its natural cask strength of 50%. The Sauternes gives honeyed apricot and candied citrus while peat phenols carry the smoke. The recorded notes run to smoke, chocolate, a cooked malt note, a medicinal edge, citrus and a coal-gas note. A Sauternes-matured farm malt.
