This 15 year old from 2008 is the sibling to cask 639 in Kilchoman's Sister Casks, A Maturation Journey, an Oloroso single cask number 633 giving 302 bottles for Germany. The pair shows how casks filled together diverge. Kilchoman is the only farm distillery on Islay, founded by Anthony Wills in 2005.
Malting, distilling and bottling all happen on the farm, the barley to bottle way. Matured in a single Oloroso cask over fifteen years, the sherry wood wraps the young peated spirit in dark fruit.
Bottled at its natural cask strength of 52.4%. From the Oloroso come dried fruit and a fig-and-raisin depth, while peat phenols bring the smoke. The recorded notes run to cooked fruit, fresh fruit, a green leafy lift, dried hay, a husky note and a leafy edge. The twin sherry cask to 639.
