Description

La Maison du Whisky bottled this 10 year old 2007 Kilchoman from an Oloroso sherry butt, cask 417. An outturn of 627 bottles for France. Anthony Wills founded Kilchoman in 2005; it is the only farm distillery on Islay.

The distillery malts its own barley and bottles on the farm. Matured in a single Oloroso butt over ten years, the sherry wood wraps the peated spirit in dark fruit.

Bottled at its natural cask strength of 59.3%. Dried fruit comes from the Oloroso, its melanoidins reading as fig and raisin, with peat phenols carrying the smoke. A sherried single cask from a French specialist.
