Description
Machir Bay is the flagship of Kilchoman, the Islay farm distillery founded by Anthony Wills in 2005, the first new distillery on the island in over 124 years. Named for the wide sandy bay near Rockside Farm, it is the bottle that introduces the distillery's young, peated house style.
Kilchoman malts barley on site and runs it through to bottling on a single Islay farm, a barley to bottle approach almost unique in Scotch. Matured in ex-Bourbon and Oloroso casks, the bourbon wood gives the base while the sherry adds a darker layer.
Bottled at 46%, non-chill-filtered and natural in colour. Peat phenols carry the smoke, the ex-Bourbon gives vanilla and citrus, and the Oloroso a touch of dried fruit. The recorded notes run to smoke, citrus, fresh fruit, a medicinal edge, vanilla and a coal-gas mineral note. The maritime heart of Kilchoman.
