Wilson & Morgan's Barrel Selection Special Release tier sits above the regular Barrel Selection Cask Strength range, reserved for casks selected for exceptional character or notable age. The Treviso based Italian bottler, operated by the Rossi family since 1992, draws on direct relationships with bodegas in Jerez for European sherry casks. This Glenrothes 25 Years Old, distilled in 1997 and bottled in 2022 from cask 715784/86 at 54.8%, runs to 499 bottles released into the event market.
Twenty five years in a Pedro Ximenez cask sits firmly in the long extractive window. The cask's first fill activity has tapered, with secondary extractions of lignin and hemicellulose dominating: syringaldehyde, vanillin and eugenol from slow lignin breakdown alongside furfural from hemicellulose chemistry. PX sherry's residual sugar concentration above 400 grams per litre has long since penetrated the spirit, with the oxidised aldehydes contributing the savoury walnut depth that distinguishes mature PX maturations from younger releases.
The nose lifts date paste and fig with polished oak underneath, the cask's developed sherry signature fully forward. The palate moves through raisin syrup, chocolate orange and a savoury walnut depth, with 54.8% strength delivering the cask's accumulated chemistry without astringency. Rancio develops alongside the residual PX sweetness, with European oak tannins framing rather than dominating. The finish runs long and tannic, the spirit's Speyside fruit holding in balance against the cask's oxidative depth.
