Description
This 25 Years Old Yamazaki represents the long aged summit of Suntory's Osaka Prefecture distillery, the first malt site in Japan, set in the humid Shimamoto valley between Osaka and Kyoto. It crowns the core range above the 12 and 18, a quarter century of maturation in the soft, river fed climate that suits slow ageing.
Maturation took place in Oloroso sherry casks, the Spanish oak that gives the house its darkest, most layered character. Across twenty five years that wood builds dark chocolate and fig, dried orange and warm spice over the distillery's deep orchard fruit, with the long ageing rounding every edge. Soft and full at 43%, it shows how sustained sherry maturation shapes Yamazaki into something rich, mellow and contemplative.
