Description

A Wolfburn single malt, a 7 year old from 2014, bottled at 50%. Just 1200 bottles were filled. Wolfburn brought whisky back to Thurso in 2013, reviving a name first raised in 1821 just up the burn. The new distillery stands some 350 metres from the ruins of the old, sharing the Wolf Burn that gives both their name.

It was drawn off a single pair of Forsyths copper stills, for the light, fresh, maritime make Wolfburn is known for. An ex-Bourbon barrel or quarter cask shaped it, vanilla beneath the fruit. Mid age brings a deeper honey and a riper coastal fruit. The maritime setting lends a faint salt to the maturing spirit. The Kylver Series gathers single casks named for the runes of an ancient Caithness stone. Water is drawn from the Wolf Burn, the stream that runs past the distillery to the sea. Wolfburn distils, matures and bottles all on its one small site at Thurso.

Bottled at a cask strength 50%, it is intense. A crisp, coastal fruit, and the bourbon cask adds vanilla and a gentle sweetness. It is clean and fruity, the young spirit shining through. A fruity, gently saline finish lingers. This is a fruity Highland malt from Scotland's most northerly mainland distillery.
