Description
This is release 7 of Wolfburn's Kylver Series, its single cask bottlings, named Gebo for a Norse rune. A 6 year old from 2014, cask 416, 465 & 577, bottled at 50%. Wolfburn, at Thurso on Scotland's far north coast, revived an old Caithness distilling name when it opened in 2013. Most of the make is unpeated, with a lightly peated malt distilled since 2014 for a gentle smoke.
It was drawn off a single pair of Forsyths copper stills, for the light, fresh, maritime make Wolfburn is known for. Maturation in a sherry cask laid dried fruit over the coastal fruit. Mid age brings a deeper honey and a riper coastal fruit. The maritime setting lends a faint salt to the maturing spirit. The core range runs Northland, Aurora, Morven and Langskip, names drawn from the far north. The Kylver Series gathers single casks named for the runes of an ancient Caithness stone. Water is drawn from the Wolf Burn, the stream that runs past the distillery to the sea.
At a hearty 50% it carries real punch. A crisp, coastal fruit, and the Oloroso adds figgy fruit and a warm nuttiness. A green apple and a citrus note lift it. It finishes clean, fresh and fruity. This is Wolfburn, the far north Highland malt.
