    This is release 8 of Wolfburn's Kylver Series, its single cask bottlings, named Wunjo for a Norse rune. An 8 year old from 2013, cask 745, bottled at 52.8%. Founded in 2013, Wolfburn is a small, hand run distillery at Thurso in Caithness. The core range runs Northland, Aurora, Morven and Langskip, each named for the far north.

    Distilled slowly on soft Wolf Burn water, giving the clean, fruity coastal spirit. A sherry butt held it, the wood lending raisin and walnut. Around six to nine years the fruit deepens into honey, apple and a soft spice. A long fermentation builds the fruity esters the casks then frame. Wolfburn distils, matures and bottles all on its one small site at Thurso. The stills came from Forsyths of Rothes, the most respected still maker in the business. The distillery sits among the rugged scenery of Caithness, near the cliffs and beaches of the north coast.

    At its natural 52.8% it is concentrated. Apple, citrus and a clean malt, and raisin and a nutty sherry depth build. It is fresh and fruity, the fruit and oak well matched. The finish is bright, fruity and coastal. This is a bright young single malt from Caithness.
