Description
This is release 9 of Wolfburn's Kylver Series, its single cask bottlings, named Hagalaz for a Norse rune. A 7 year old from 2015, cask 49 + 50 + 68, bottled at 52.8%. Wolfburn brought whisky back to Thurso in 2013, reviving a name first raised in 1821 just up the burn. The Kylver Series of single casks is named for the runes of an ancient Caithness stone.
The spirit was made by hand in copper stills at Thurso, to build a soft, fruity, coastal character. A wine cask held it, layering fruit over the fresh malt. By this age the young spirit rounds into orchard fruit and a gentle oak. A patient maturation suits the light, coastal Wolfburn character. Hand filling and hand labelling are still the rule in the warehouses here. A young distillery, Wolfburn has built a following quickly since its first single malt in 2016. The far north air, salt laden and cool, lends the maturing spirit a coastal edge.
Undiluted at 52.8%, it is powerful. A fresh, fruity coastal sweetness, and the Rum cask brings brown sugar and a tropical lift. Beneath it run apple, citrus and a soft malt. It closes fresh, fruity and clean. This is a light, fresh Highland single malt from the far north.
