Description

A Wolfburn single malt, a 6 year old from 2016, bottled at 46%. Just 450 bottles were filled. Founded in 2013, Wolfburn is a small, hand run distillery at Thurso in Caithness. The original Wolfburn was founded in 1821 by William Smith and was once the largest distillery in Caithness, falling silent in the 1860s.

The spirit was run through the distillery's one wash and one spirit still, for a clean, fruity make. A sherry cask wrapped the light spirit in dried fruit and a nutty depth. By this age the young spirit rounds into orchard fruit and a gentle oak. Sea air and active wood together shape the young far north spirit. Most of the make is unpeated, with a lightly peated malt distilled since 2014 for a soft smoke. The core range runs Northland, Aurora, Morven and Langskip, names drawn from the far north. The Kylver Series gathers single casks named for the runes of an ancient Caithness stone.

At 46% it is clean and coastal. Pear, honey and a clean malt, and the Oloroso adds figgy fruit and a warm nuttiness. A vanilla and a sea air note give it lift. Apple, honey and a sea air lift see out the finish. This is a fresh, maritime far north single malt.
