Description
This is release 3 of Wolfburn's Kylver Series, its single cask bottlings, named Thurisaz for a Norse rune., bottled at 50%. Wolfburn brought whisky back to Thurso in 2013, reviving a name first raised in 1821 just up the burn. The original Wolfburn was founded in 1821 by William Smith and was once the largest distillery in Caithness, falling silent in the 1860s.
The spirit was made by hand in copper stills at Thurso, to build a soft, fruity, coastal character. Maturation came in ex-Bourbon wood, with vanilla under the fresh fruit. Carrying no age, it leans on apple, citrus and a clean malt. Years in oak round the spirit, the fruit and a coastal salt deepening with age. Wolfburn distils, matures and bottles all on its one small site at Thurso. The stills came from Forsyths of Rothes, the most respected still maker in the business.
At a full 50% it is bold and fruity. A fresh, fruity coastal sweetness, and vanilla and a soft oak come from the bourbon wood. It is clean and fruity, the young spirit shining through. A fruity, gently saline finish lingers. This is a fruity Highland malt from Scotland's most northerly mainland distillery.
