Description
This is release 14 of Wolfburn's Kylver Series, its single cask bottlings, named PERTHRØ for a Norse rune. A 7 year old from 2017, bottled at 52.5%. Founded in 2013, Wolfburn is a small, hand run distillery at Thurso in Caithness. It is the most northerly distillery on the Scottish mainland, on the North Coast 500 at Thurso.
Distilled slowly on soft Wolf Burn water, giving the clean, fruity coastal spirit. Ex-Sherry wood added a dried fruit richness to the fresh make. By this age the young spirit rounds into orchard fruit and a gentle oak. Sea air and active wood together shape the young far north spirit. The far north air, salt laden and cool, lends the maturing spirit a coastal edge. The original Wolfburn, founded in 1821 by William Smith, was once the largest distillery in Caithness before falling silent in the 1860s. The new distillery stands about 350 metres from the old ruins, sharing the Wolf Burn that names them both.
Bottled at a cask strength 52.5%, it is intense. Apple, citrus and a clean malt, and the Oloroso adds figgy fruit and a warm nuttiness. A vanilla and a sea air note give it lift. Apple, honey and a sea air lift see out the finish. This is a fresh, maritime far north single malt.
