Description
This is release 11 of Wolfburn's Kylver Series, its single cask bottlings, named Isa for a Norse rune., bottled at 53.4%. Set on the wild Caithness coast at Thurso, Wolfburn has made single malt since 2013. The core range runs Northland, Aurora, Morven and Langskip, each named for the far north.
Distilled by hand in a single pair of copper stills on Wolf Burn water, building the fresh far north style. Maturation in a sherry cask laid dried fruit over the coastal fruit. Without an age statement, it is light, coastal and fruity. The cool, salt laden far north air works into the dunnage warehouses by the burn. Wolfburn distils, matures and bottles all on its one small site at Thurso. The stills came from Forsyths of Rothes, the most respected still maker in the business. The distillery sits among the rugged scenery of Caithness, near the cliffs and beaches of the north coast. Hand filling and hand labelling are still the rule in the warehouses here.
At a hearty 53.4% it carries real punch. A light, citrussy fruitiness, and the Oloroso gives dried fruit and a toasted nuttiness. A green apple and a citrus note lift it. It finishes clean, fresh and fruity. This is Wolfburn, the far north Highland malt.
