Wolfburn Single Cask #2015#614 6 Years Old 2015 (Ex-Bourbon)

A Wolfburn single malt, a 6 year old from 2015, cask 2015#614, bottled at 56.7%. Just 168 bottles were filled. Wolfburn, at Thurso on Scotland's far north coast, revived an old Caithness distilling name when it opened in 2013. It is the most northerly distillery on the Scottish mainland, on the North Coast 500 at Thurso.

Distilled by hand in a single pair of copper stills on Wolf Burn water, building the fresh far north style. Maturation came in ex-Bourbon wood, with vanilla under the fresh fruit. Around six to nine years the fruit deepens into honey, apple and a soft spice. Years in oak round the spirit, the fruit and a coastal salt deepening with age. The stills came from Forsyths of Rothes, the most respected still maker in the business. The distillery sits among the rugged scenery of Caithness, near the cliffs and beaches of the north coast. Hand filling and hand labelling are still the rule in the warehouses here.

At 56.7%, undiluted, it is bright and full. A light, citrussy fruitiness, and vanilla and a soft oak come from the bourbon wood. Soft orchard fruit and honey sit behind the cask. The close is fresh, fruit over a clean oak. This is the light coastal malt of Thurso.
