Description
Wolfburn Japan - Exclusive III, a single malt from the far north distillery at Thurso, bottled at 50%. Wolfburn is the most northerly distillery on the Scottish mainland, at Thurso in Caithness, where whisky has flowed again since 2013. The new distillery stands some 350 metres from the ruins of the old, sharing the Wolf Burn that gives both their name.
It was worked through the distillery's small copper stills, for a light, citrussy spirit with a sea air lift. An ex-Bourbon barrel or quarter cask shaped it, vanilla beneath the fruit. Without an age statement, it is light, coastal and fruity. Sea air and active wood together shape the young far north spirit. The distillery sits among the rugged scenery of Caithness, near the cliffs and beaches of the north coast. Hand filling and hand labelling are still the rule in the warehouses here. A young distillery, Wolfburn has built a following quickly since its first single malt in 2016.
Undiluted at 50%, it is powerful. Green apple, vanilla and a sea air lift, and the bourbon cask adds vanilla and a gentle sweetness. It is fresh and fruity, the fruit and oak well matched. The finish is bright, fruity and coastal. This is a bright young single malt from Caithness.
