Description
A Wolfburn single malt, a 7 year old from 2013, cask 111 & 116, bottled at 46%. Just 660 bottles were filled. Wolfburn is a far north craft distillery at Thurso in Caithness, working by hand since 2013. The core range runs Northland, Aurora, Morven and Langskip, each named for the far north.
Distilled slowly on soft Wolf Burn water, giving the clean, fruity coastal spirit. It rested in ex-Bourbon oak for a honeyed sweetness. By this age the young spirit rounds into orchard fruit and a gentle oak. A young distillery, Wolfburn leans on active casks, the wood shaping much of the flavour. Everything here is done by hand, from milling to bottling, the mark of a true small distillery. Most of the make is unpeated, with a lightly peated malt distilled since 2014 for a soft smoke. The core range runs Northland, Aurora, Morven and Langskip, names drawn from the far north.
At an approachable 46% it is light and balanced. Apple, citrus and a clean malt, and honeyed vanilla comes through from the ex-Bourbon. A vanilla and a sea air note give it lift. Apple, honey and a sea air lift see out the finish. This is a fresh, maritime far north single malt.
