    From the Stills is a seasonal Wolfburn distillery edition, the Summer 2020 release. Bottled at 46%. Wolfburn brought whisky back to Thurso in 2013, reviving a name first raised in 1821 just up the burn. The new distillery stands some 350 metres from the ruins of the old, sharing the Wolf Burn that gives both their name.

    It was drawn off a single pair of Forsyths copper stills, for the light, fresh, maritime make Wolfburn is known for. An ex-Bourbon barrel or quarter cask shaped it, vanilla beneath the fruit. With no age statement, it shows the light, fresh, fruity character of young Wolfburn. Sherry wood suits the light make, lending dried fruit and a nutty depth. The stills came from Forsyths of Rothes, the most respected still maker in the business. The distillery sits among the rugged scenery of Caithness, near the cliffs and beaches of the north coast. Hand filling and hand labelling are still the rule in the warehouses here.

    At 46% it is clean and coastal. A crisp, coastal fruit, and the bourbon cask adds vanilla and a gentle sweetness. A green apple and a citrus note lift it. It finishes clean, fresh and fruity. This is Wolfburn, the far north Highland malt.
