Wolfburn From the Stills Cask #260 / 323

From the Stills is a seasonal Wolfburn distillery edition, the Spring 2020 - Distillery Release. Bottled at 46%. Founded in 2013, Wolfburn is a small, hand run distillery at Thurso in Caithness. The original Wolfburn was founded in 1821 by William Smith and was once the largest distillery in Caithness, falling silent in the 1860s.

The spirit was run through the distillery's one wash and one spirit still, for a clean, fruity make. A sherry butt held it, the wood lending raisin and walnut. No age is given, but the fresh fruit marks it as young Wolfburn. The slow loss of the angel's share concentrates the fruity, coastal core over time. The Kylver Series gathers single casks named for the runes of an ancient Caithness stone. Water is drawn from the Wolf Burn, the stream that runs past the distillery to the sea. Wolfburn distils, matures and bottles all on its one small site at Thurso.

At an easy 46% it is light. Pear, honey and a clean malt, and the Oloroso brings dried fruit, fig and a nutty depth. The mouthfeel is light, the fruit carried on a clean body. A long, fruity finish carries a coastal lift. This is a clean, fruity Highland single malt.
