Description
From the Stills is a seasonal Wolfburn distillery edition, the Christmas 2019 - Distillery Release. Bottled at 46%. Wolfburn is a far north craft distillery at Thurso in Caithness, working by hand since 2013. It is the most northerly distillery on the Scottish mainland, on the North Coast 500 at Thurso.
Distilled slowly on soft Wolf Burn water, giving the clean, fruity coastal spirit. Maturation came in ex-Bourbon wood, with vanilla under the fresh fruit. Carrying no age, it leans on apple, citrus and a clean malt. Refill oak lets the fresh, fruity distillery character lead. A young distillery, Wolfburn has built a following quickly since its first single malt in 2016. The far north air, salt laden and cool, lends the maturing spirit a coastal edge. The original Wolfburn, founded in 1821 by William Smith, was once the largest distillery in Caithness before falling silent in the 1860s.
At 46% it is supple and fresh. Apple, citrus and a clean malt, and vanilla and a soft oak come from the bourbon wood. It is fresh and fruity, the fruit and oak well matched. The finish is bright, fruity and coastal. This is a bright young single malt from Caithness.
