Description
A Wolfburn single malt, a 6 year old from 2014, cask 814 & 816, bottled at 51.3%. Just 720 bottles were filled. Wolfburn is the most northerly distillery on the Scottish mainland, at Thurso in Caithness, where whisky has flowed again since 2013. Water comes from the Wolf Burn, the stream that runs past the distillery to the sea.
It was worked through the distillery's small copper stills, for a light, citrussy spirit with a sea air lift. A sherry cask wrapped the light spirit in dried fruit and a nutty depth. Around six to nine years the fruit deepens into honey, apple and a soft spice. A young distillery, Wolfburn leans on active casks, the wood shaping much of the flavour. The new distillery stands about 350 metres from the old ruins, sharing the Wolf Burn that names them both. It is the most northerly distillery on the Scottish mainland, a stop on the North Coast 500.
At 51.3%, undiluted, it is bright and full. Green apple, vanilla and a sea air lift, and raisin and a nutty sherry depth build. A vanilla and a sea air note give it lift. Apple, honey and a sea air lift see out the finish. This is a fresh, maritime far north single malt.
