Description
A Wolfburn single malt, an 8 year old from 2015, cask 79 + 80, bottled at 56.9%. Just 480 bottles were filled. Set on the wild Caithness coast at Thurso, Wolfburn has made single malt since 2013. The Kylver Series of single casks is named for the runes of an ancient Caithness stone.
The spirit was made by hand in copper stills at Thurso, to build a soft, fruity, coastal character. A wine cask held it, layering fruit over the fresh malt. Mid age brings a deeper honey and a riper coastal fruit. The maritime setting lends a faint salt to the maturing spirit. Wolfburn distils, matures and bottles all on its one small site at Thurso. The stills came from Forsyths of Rothes, the most respected still maker in the business. The distillery sits among the rugged scenery of Caithness, near the cliffs and beaches of the north coast. Hand filling and hand labelling are still the rule in the warehouses here.
At cask strength 56.9% it is muscular yet fresh. A fresh, fruity coastal sweetness, and the Rum cask brings brown sugar and a tropical lift. Beneath it run apple, citrus and a soft malt. It closes fresh, fruity and clean. This is a light, fresh Highland single malt from the far north.
