Description
Wolfburn Christmas Distillery Edition 2021, a single malt from the far north distillery at Thurso, bottled at 46%. Just 2510 bottles were filled. Wolfburn is a far north craft distillery at Thurso in Caithness, working by hand since 2013. The core range runs Northland, Aurora, Morven and Langskip, each named for the far north.
Distilled slowly on soft Wolf Burn water, giving the clean, fruity coastal spirit. Ex-Sherry wood added a dried fruit richness to the fresh make. With no age statement, it shows the light, fresh, fruity character of young Wolfburn. Sea air and active wood together shape the young far north spirit. Wolfburn distils, matures and bottles all on its one small site at Thurso. The stills came from Forsyths of Rothes, the most respected still maker in the business. The distillery sits among the rugged scenery of Caithness, near the cliffs and beaches of the north coast.
At an approachable 46% it is light and balanced. Apple, citrus and a clean malt, and the Oloroso adds figgy fruit and a warm nuttiness. The texture is light and fresh, the fruit lifted by a coastal salt. The finish runs light, coastal and crisp. This is Wolfburn's clean, coastal Thurso single malt.
