West Cork Irish IPA Cask Matured is a blended Irish whiskey from West Cork Distillers, marrying the distillery's own malt and grain at its Skibbereen home in Co. Cork. This 2019 bottling has no age statement and takes an unusual finishing route through beer casks from a local brewery.
After maturing in ex-bourbon oak, it is finished in India Pale Ale casks from Black's of Kinsale, picking up a hoppy, citric lift and a grassy, cereal freshness alongside soft vanilla and fresh fruit. Bottled at 40%, it stays light and easy, the ale cask giving a gentle bitterness that sets it apart from the standard blend.
