Description
Villa Sandi is a long established Prosecco house in Veneto, and this wine comes from the top Conegliano Valdobbiadene DOCG zone. It is made only from Glera, the classic Prosecco grape, grown on calcareous moraine soils that lend a fine minerality and structure. Vinification follows the tank method, with gentle whole cluster pressing and a temperature controlled fermentation at 15 to 16 degrees that preserves the fresh fruit and floral aromatics rather than building autolytic depth. The Extra Dry dosage leaves a touch more roundness than a Brut, read as gentle fruitiness rather than obvious sweetness.
The colour is light straw with a fine, persistent perlage. The nose is elegant, with white orchard fruit, floral nuances and a subtle citrus edge. The palate is fresh and harmonious, with green apple, pear and white peach carried by lively acidity and a clean, animating finish. Serve well chilled at around 6 to 8 degrees. It works as an aperitif and alongside marinated fish, herb led pasta and light Mediterranean starters.
