Villa Sandi produces Auris as a Brut spumante in the fresh, modern style of the Veneto, working with the region's classic white fruit led by Glera. It is a tank-method wine, with careful vinification at controlled temperatures that preserves the fresh fruit and fine floral aromatics rather than building autolytic depth. The Brut dosage keeps the finish dry and lively, and the wine is built as a versatile, accessible pour for aperitifs and celebrations rather than for the cellar.

The colour is light straw with a fine, persistent perlage. The nose is fresh, with white orchard fruit, citrus and fine floral nuances. The palate is fresh and harmonious, with green apple, pear, lemon and white peach carried by a lively bead and a balanced, dry finish. This is a wine to enjoy young and well chilled, while its primary fruit is at its brightest. Serve at around 6 to 8 degrees in a tulip glass. It works as an aperitif and alongside antipasti, fish dishes and light seafood.
