Description
Villa Sandi makes this Prosecco Superiore from the hills of Montello and the Colli Asolani in the Treviso province, at the foot of the Dolomites, working with certified vineyards managed to a biodiversity standard. It is a tank-method wine made from Glera, with gentle pressing followed by a temperature controlled second fermentation at 15 to 16 degrees that preserves the natural fruit aromas and the characteristic freshness. The Brut dosage keeps the finish dry, with the medium depth, low lime soils lending a balanced structure.
The colour is pale straw with a fine, persistent effervescence. The nose is elegant, with ripe apple, pear and white flowers. The palate is fresh and balanced, with delicate fruit, lively acidity and a soft, finely integrated mousse, closing fresh and long. Serve well chilled at around 6 to 8 degrees. It works as an aperitif and alongside finger food, seafood salads and light fish dishes.
