Villa Sandi makes this single-vintage Prosecco Superiore DOCG from the famous hills between Conegliano and Valdobbiadene, the top tier of the zone, using 100 percent Glera grown on moraine slopes of calcareous soil with loam and clay. Those soils give the wine an elegant minerality and precise structure. After gentle whole cluster pressing, the must is held at a controlled temperature and fermented at 15 to 16 degrees, and the wine is made by the tank method to preserve the fresh fruit and floral aromas. The brut dosage keeps it dry, a shade crisper than an extra dry.
The colour is pale straw with a fine, persistent perlage. The nose leads with green apple, pear and lemon over white flowers, with white peach behind and a mineral, saline edge. The palate is dry and lively, fine fruit carried by clean acidity and a soft mousse to a clear, mineral finish. Serve well chilled at 6 to 8 degrees in a white wine glass. It makes an elegant aperitif and suits fine starters, savoury snacks, white fish and shellfish.
