Description
Villa Sandi is best known for Prosecco, but OPERE Serenissima steps into the traditional method with a cuvee of Chardonnay and Pinot Noir. The base wines ferment under controlled conditions to protect fruit quality, then the wine undergoes a second fermentation in the bottle and ageing on the lees, the same approach used across Italy's classic method regions. That lees contact builds a soft bready, nutty layer beneath the fruit, while a modest dosage keeps the finish dry and balanced.
The colour is a bright golden yellow with a fine perlage. The nose leads with orange blossom, white flowers and orchard fruit over a light toasted bread note from time on the lees. The palate is dry and melting, with green apple, pear and citrus peel carried by a fine mousse and a long, gently floral finish. Serve well chilled at around 5 to 7 degrees in a tulip glass. It works as an aperitif and alongside shellfish, white fish and hard nutty cheese.
