Description
Villa Sandi produces this Prosecco Superiore DOCG from Glera grown on the calcareous hills of Valdobbiadene, where the microclimate and mineral soils favour fine, aromatic fruit. It is a tank-method wine, with gentle pressing followed by fermentation and a period of maturation on the fine lees in temperature controlled tanks, which lends a little extra roundness to the fresh fruit. The Extra Dry style leaves a gentle roundness on the finish that reads as ripe fruit rather than sweetness.
The colour is very pale straw with a fine perlage. The nose is fruity, with green Granny Smith apple to the fore and a floral hint of acacia blossom. The palate is pleasant and elegant, with pear, white peach and a soft floral thread, closing long, harmonious and gently rounded. Serve well chilled at around 6 to 8 degrees. It works as an aperitif and alongside marinated fish, fresh salads and light seafood.
