Description
Villa Sandi builds this Rosato from a cuvee of white and red grapes, with the red portion, typically Pinot Noir, macerated gently to draw out colour and fine tannins. The grapes come from marly soils in north east Italy. It is a tank-method wine, with a second fermentation at a controlled 15 to 16 degrees using selected yeasts, followed by at least two months on the lees to build a fine, long lasting perlage and a little creamy texture. The Brut dosage keeps the finish dry while the red fruit stays fresh and lively.
The colour is a delicate rose with a fine, persistent perlage. The nose is fruity and floral, with strawberry, raspberry and red currant lifted by white flowers. The palate is fresh and lively, with red berries and a touch of white peach carried by a creamy bead and a balanced, dry finish. Serve well chilled at around 8 to 10 degrees. It works as an aperitif and alongside fish dishes, summer starters and Mediterranean antipasti.
