Villa Sandi makes this Il Fresco Brut entirely from Glera grown in the province of Treviso in Veneto, where moraine hills and alluvial soils suit the variety. After gentle whole-cluster pressing, the must is cool-fermented at 15 to 16 degrees to hold the fruit and floral aromatics, and the second fermentation is carried out by the tank method to keep the wine fresh rather than bready. The result is a dry, balanced Prosecco, and this half-bottle format suits an aperitif or a single serving.
The wine is a light straw yellow with a fine, lively bead. The nose shows white fruit, citrus and delicate floral nuances. The palate is dry, fresh and harmonious, with elegant fruit, a fine structure and an animating lightness into a clean, long finish. Serve well chilled at 5 to 7 degrees in a white wine glass. It works as an aperitif and alongside antipasti, steamed shellfish, light starters and Mediterranean fish dishes.
