Description
Villa Sandi makes Il Fresco in the province of Treviso, where moraine hills and alluvial soils suit high-quality Prosecco, and this bottling is 100 per cent Glera. After gentle whole-cluster pressing the must is held cool, then fermented at 15 to 16 degrees to protect the fine fruit and floral aromatics. The second fermentation follows the Charmat method under controlled conditions in stainless steel, which gives the elegant, persistent bead and keeps the wine primary rather than toasty. It is finished as a brut, so the palate stays dry, and this 200 ml bottle is a convenient single serve.
The colour is a light straw yellow with a fine, lively bead. The nose shows white fruit, citrus and delicate floral nuances, and the palate is dry, fresh and harmonious, with clean orchard fruit, fine structure and a long, lively finish. Serve well chilled at 6 to 8 degrees in a white wine glass. It makes a clean aperitif and pairs with savoury snacks, antipasti and steamed shellfish, and it also suits light starters and fish dishes.
