Description
Villa Sandi makes Il Fresco Prosecco Biologico from 100 percent Glera grown in organically farmed vineyards within the Prosecco DOC region, the organic approach meant to bring out the terroir and the natural fruit. After gentle whole cluster pressing, the must ferments at a controlled temperature, and the second fermentation runs by the tank method at 15 to 16 degrees, which gives the elegant perlage while preserving the fresh, floral fruit. The brut dosage keeps the wine dry and lively, and it is built for freshness and early drinking rather than ageing.
The colour is pale straw with a fine, lively perlage. The nose shows green apple, pear and lemon over white flowers, with a touch of citrus peel and a hint of white peach. The palate is fresh and dry, a lively structure and soft mousse carrying the fruit to a clean finish. Serve well chilled at 6 to 8 degrees in a white wine glass or flute. It makes an easy aperitif and suits shellfish, fried fish, light starters and summer salads.
