Villa Sandi makes Il Fresco Blanc de Blanc as a bright, everyday sparkling wine from white grapes, led by Glera, in the Veneto. It is produced by the Charmat method, the second fermentation running in pressurised stainless steel tanks under controlled temperature rather than in bottle. Keeping the wine in tank and off oak preserves the primary orchard fruit and floral aromatics that define the style, and the brut dosage keeps it dry and clean. This is a wine built for freshness and easy drinking rather than long ageing.

The colour is pale straw with green tints and a fine, lively bead. The nose leads with green apple, pear and lemon over white flowers, with white peach and an elderflower note behind. The palate is light and fresh, dry and crisp, the soft mousse carrying the fruit to a clean finish. Serve well chilled at 6 to 8 degrees in a white wine glass or flute. It makes a straightforward aperitif and suits light salads, white fish and delicate shellfish.
