Veuve Clicquot Ponsardin makes this Demi-Sec in the Champagne region using the traditional method, with the second fermentation taking place in bottle and a spell of ageing on the lees that builds texture and gentle bread and pastry character. The blend uses Chardonnay, Pinot Noir and Pinot Meunier for balance between citrus freshness, orchard fruit and body. What sets it apart is the higher dosage: where Brut Champagne finishes dry, this Demi-Sec keeps a rounder sweetness that broadens the palate and makes it a natural partner for dessert rather than the table.
Expect a bright golden colour with a fine, steady bead. The nose leads with ripe apple, pear and white peach, backed by honey and light toast from the lees. The palate is soft and creamy, the sweetness balanced by fresh acidity so it stays lively rather than cloying, closing long with a touch of vanilla. Serve well chilled at 8 to 10 degrees in a tulip glass. It works alongside fruit tarts, light cream desserts and even a wedge of blue cheese.
