Description
The Phoenix was a limited edition of Tullamore D.E.W. released in 2013, named for the phoenix on the town's coat of arms and marking the brand's rebuild after fire. It is a no age statement blend of pot still, malt and grain, bottled for the French market.
After ex-bourbon maturation, the whiskey finishes in Oloroso sherry casks, which layer dried fruit, honey and a nutty sweetness over the vanilla and fresh wood. Bottled undiluted at cask strength, 55%, it is far bigger and bolder than the standard Tullamore style, with the higher proof concentrating the sherry richness. A drop of water opens it up.
