Description
This is a Tobermory, drawn and bottled by Sansibar, an 8 year old release from 2010 and bottled at 53.7%. Only 324 bottles were released. Made on the Isle of Mull, Tobermory is the unpeated single malt of the island's sole distillery. The stills carry boil bulbs and an S shaped kink in the lyne arms, which raises reflux.
Distilled in the kinked copper stills for a fruity spirit, building the oily Tobermory style. A sherry cask wrapped the waxy spirit in dried fruit and a nutty depth. Still young, it is fruity and oily with a nutty edge. The slow loss of the angel's share concentrates the fruity, waxy core over time. Tobermory has distilled in the island's harbour town since 1798. The town of Tobermory was laid out by the British Fisheries Society a decade before the distillery came. The distillery's history is broken by long silences; its buildings once stored a local cheddar.
Bottled at a cask strength 53.7%, it is intense. Honey, wax and a soft nut, and the Oloroso lends raisin, walnut and a dried fruit richness. A green note and a gentle spice give it depth. Wax and ripe fruit see out a long finish. This is an unpeated malt from Mull's only distillery.
