The Nectar Of The Daily Drams selects this unaged Le Galion from Martinique, and despite the agricole company it keeps, it is a high-ester Grand Arôme made from molasses, not fresh cane juice. That long-ferment molasses base is the source of its wild, funky character, so it earns its place by intensity rather than feedstock.

Bottled at a forthright 60%, it bursts with vegetal, green and olive notes on the nose alongside banana and a saline edge. The palate stays green and briny with banana and a touch of raw sugar, before a pungent, astringent and faintly sweet sugarcane finish. Unsweetened and bracing, this is a savoury funk bomb that sits closer to a wild Jamaican white than a grassy blanc. It is built for Daiquiris, creative food pairings and anyone who wants their white rum loud, green and salty.
